This table shows the details of the maple syrup made during each boil, including the amount of sap we started with, the sugar content of the sap, and the resultant amount of maple syrup and its grade. We don’t really boil these small quantities of sap, so this data is part of a larger operation. The chart at the bottom is a real-time estimate of the amount syrup made based on the amount of sap and its sugar content for each day.
